PROBLEM TO BE SOLVED: To provide a process for producing a low molecular weight protein by subcritical water treatment, and to provide a food material and a feed material each containing the obtained low molecular weight protein.
SOLUTION: This process for producing the low molecular weight protein comprises subjecting livestock blood to subcritical water treatment. It is preferable to perform the subcritical water treatment in the presence of an antioxidant, especially in the presence of livestock internal organs, tissue and/or feather and/or animal hair which produce the antioxidant by the subcritical water treatment. The low molecular weight protein thus obtained contains rich and useful amino acid such as lysine and is useful as the food material and the feed material.
