Provided are compositions and methods for clear and stable beverages that contain additives such as a PEG-derivative of Vitamin E； essential fatty acids, including omega-3 fatty acids, omega-6 fatty acids, conjugated fatty acids, and other fatty acids； phytochemicals, including phytosterols； other oils； and coenzymes, including Coenzyme Q10, and other oil-based additives. Claim 1 is essentially directed to a liquid nanoemulsion concentrate comprising: 16% to 30% by weight of a mixture of one or more sucrose fatty acid esters or mixture of the sucrose fatty acid esters and a PEG-derivative of Vitamin E； 60% to 79% by weight of a polar solvent； and 5% to 10% by weight of the non-polar active ingredient.
