PROBLEM TO BE SOLVED: To provide baked chocolate free from becoming sticky or adhering to the fingers even when having a temperature not less than a melting point, having crispy feeling on the surface and comfortable sensation to the teeth, and retaining in the inside original flavor and smoothness of chocolate.
SOLUTION: The baked chocolate is obtained by containing trehalose and/or maltose in chocolate dough, and baking the product. When baking, it is preferable to bake so as to thermally denature the surface of chocolate and not to thermally denature the inside of chocolate. Furthermore, it is preferable to bake using a Schwank burner.
