The invention relates to a method for producing shaped food products in whicha frozen preliminary product isproduced from one or more foods, in particular meat, game, poultry, vegetableor fish or a combination and/or a mixture made upof these, the preliminary product is shaped into a food product of the desiredcontour by means of at least one shaping operation inthe course of processing and, within the shaping operation, at least onepressure die presses the preliminary product against a planaror contoured abutment to produce the contour. It is intended that theinvention will make the known shaping methods more gentle.For gentle processing, the invention proposes a phased shaping cycle orshaping in a number of partial pressing steps in which thepressure or displacement is controlled.
