According to the present invention, a manufacturing method of grilled short rib patties comprises: a first step for making meat for grilled short rib patties by mixing 10-13 parts by weight of seasoning sauce for grilled short rib patties, 0.2-0.4 parts by weight of glutarin, 0.1-0.3 parts by weight of white sugar, 1-2 parts by weight of frying powder, and 0.4-0.6 parts by weight of sesame oil and a second step for fermenting the lamb meat mixture at the temperature of 5-10°C for 50-130 minutes.
