The device includes: a base part including a flat sliding surface formed in the upper part； a cylindrical mold installed on the sliding surface, having upper and lower parts opened, and including a molding space； a support plate installed on the base part to be stored in the mold； and a pressurizing part installed in the upper part of the mold to mold leaven ingredients, which are inserted into the mold, by pressurizing the ingredients from the top. When the leaven, molded in the mold, is required to be discharged to the outside, the mold forms the molding space by combining first and second unit molding parts so that the mold is separated into two parts and unfolded from the support plate to the right and left sides.본 발명은 누룩 성형기와 누룩 성형방법에 관한 것으로서, 더욱 상세하게는 누룩의 품질이 균일하며 누룩의 성형이 용이한 누룩 성형기와 누룩 성형방법에 관한 것이다. 본 발명의 누룩 성형기는 상부에 평활한 슬라이딩면이 형성된 베이스부와, 슬라이딩면에 설치되며 상하부가 개방되고 내부에 성형공간이 마련된 통형의 몰드와, 베이스부의 상부에 설치되어 상기 몰드의 내부에 수용되는 지지플레이트와, 몰드의 상방에 설치되어 상기 몰드의 내부로 투입된 누룩재료를 상방에서 가압하여 성형하는 가압수단을 구비하고, 상기 몰드의 내부에서 성형된 누룩을 외부로 배출시에는 상기 몰드가 2개의 부분으로 분리되어 상기 지지플레이트를 중심으로 좌우 방향으로 벌어질 수 있도록 상기 몰드는 제 1단위금형부와 제 2단위금형부가 결합하여 상기 성형공간을 형성한다.
