The present invention refers to processing of whole maize flour or decorticated (without pericarp and germ or without one of these fractions), conditioning said fractions with water and lime and processing the same in a high power mill or a ball mill prototype or any prototype of mill at a laboratory, semi-industrial or industrial scale which generates calorific energy through shearing between the flour conditioned with or without water and with lime or through the balls or the walls of the chamber or by applying an external source of heat by means of jackets in the milling chamber which are heated by electricity or by hot fluids useful to generate suitable changes for obtaining a nixtamalized flour. This process may use the whole grain, also being a quick and continuous process without effluent generation, which uses high energy mills in any of the variants thereof, reduced spaces and labour the process may achieve flour and masa for producing tortillas of excellent texture and sensory properties.
