The present invention relates to a potato cutting device for making a potato stick with a wavy pattern and, more specifically, to a potato cutting device for making a potato stick with a constant size and a surface pattern through a continuous process of cutting a potato to a certain thickness and cutting the potato to a predetermined thickness in the process of transferring the cut potato. The potato cutting device for making a potato stick with a wave pattern of the present invention comprises a first conveyor belt; a cutting chamber; a rotation unit; a first cutting unit; and a second cutting unit. The first conveyor belt receives a driving force from a motor and is rotated in the forward and backward directions by a pair of driving rollers disposed in the forward and backward directions. The cutting chamber is formed in a cylindrical shape extended in the left and right directions, has a potato input port on one side surface in the axial direction, and is disposed on one end of the first conveyor belt while the central axis is arranged to be orthogonal to the moving direction of the first conveyor belt. The rotation unit is disposed inside the cutting chamber and makes the potato input into the cutting chamber be rotated along the inner circumferential surface of the cutting chamber. The first cutting unit is formed on the side wall of the cutting chamber towards the other side of the first conveyor belt and cuts the potato rotated by the rotation unit to a predetermined thickness.
