The utility model relates to a process of producing canned food mutton civeche (kilawin) comprising the steps of: boiling the skin until slightly tender cutting it into lx 0.25cm strips setting aside for incorporation with the lean marinating the lean meat in the given ingredients salt, black pepper vinegar, monosodium glutamate for 30 minutes frying in oil until slightly brown cutting the fried lean meat into 1x 0.25cm strips as that with the skin sauteing the lean meat and the skin with garlic and onions adding with chopped onions, ginger, monosodium glutamate, salt and calamansi juice, and liver spread mixing until uniformly blended heating said mixture for 10 minutes filling product into 211x300 cans sealing the cans using a can seamer sterilizing the canned products at 15 pounds/square inch (psi) for 1 hour cooling the cans with running water cleaning the cans with dry clean cloth and labeling the products.
