The method for producing the separated cheesecake according to the present invention comprises: a dough making step of making dough containing wheat flour and cream cheese； a primary heating step of arranging the dough on a pan, closing a pan top, putting the pan on an induction range and heating the pan； a secondary heating step of opening the pan top after the primary heating step, continuing to heat the pan and making a plastic material； a room temperature cooling step of cooling the plastic material, having passed the secondary heating step, at room temperature to get the temperature of the plastic material to be the room temperature； a cutting step of selecting one shape among characters and figures where a cutting member (10) selecting a closed figure shape having the separated inside and outside is prepared, and then a separation part (20) selecting one shape among the characters and the figures, separated from the whole plastic material, is formed by cutting the surface of the plastic material having passed the room temperature cooling step from an upper part to a lower part； and a cooling step of cooling the plastic material, having passed the cutting step, at the temperature equal to or less than 4°；C.
