PROBLEM TO BE SOLVED: To provide a method for separation and recovery of egg shell and egg shell membrane with high recovery efficiency, in which the egg shell and the egg shell membrane can be separated and recovered without causing denaturation of the protein of the egg shell membrane, and to provide an apparatus for the same.SOLUTION: Egg shells 1 from inside of which egg white is removed are washed and dried. A reticulate egg shell case 3 is provided in which the egg shells 1 are individually separated and stored. A pressure tank 10 is equipped in which the egg shells 1 together with the egg shell case 3 are immersed in a carbonated aqueous solution P. The pressure tank 10 is formed of a pressure tank. A deaerator 20 for deaerating the water stored in the pressure tank 10 is equipped. A cooling device 30 for cooling the deaerated water is equipped. A carbon dioxide cylinder 50 for filling the deaerated and cooled water with carbon dioxide is equipped. A pressure pump 40 pressurizing the pressure in the pressure tank 10 is equipped. The egg shells 1 with the egg shell film 2 are, together with the egg shell case 3, immersed in the carbonated aqueous solution P, while carbon dioxide is being supplied to the carbonated aqueous solution P cooled and pressurized in the pressure tank 10.
