The present invention provides a method for cooking rice containing extracts of lotus leaves or Phyllostachys nigra or powder made from the lotus leaves or Phyllostachys nigra； and cooked rice thereby capable of preventing and suppressing diabetes by active ingredients from the lotus leaves or Phyllostachys nigra with the small amounts of the extracts of the lotus leaves or Phyllostachys nigra when cooking rice, through increasing the content of compounds of flavonoid and polyphenol which are the active ingredients included in the lotus leaves or Phyllostachys nigra and stabilizing for the extracted active ingredients from being vaporized with water.본 발명은, 성인병 중에서 당뇨병에 효과가 있다고 알려진, 연잎 또는 오죽이 함유하고 있는 유효성분인 플라보노이드와 폴리페놀 화합물의 함량을 연잎 또는 오죽 추출물에서 증대하고, 추출된 유효성분이 수분과 같이 증발되지 않도록 안정화시켜, 밥을 지었을 때에 상기 연잎 또는 오죽 추출물의 적은 양의 첨가만으로도 상기 유효성분에 의한 당뇨병 예방 및 억제 효과가 발현되는 연잎 또는 오죽의 추출물이거나연잎 또는 오죽의 분말을 함유한 밥의 제조방법 및 이로부터 제조된 밥을 제공하는 것이다.
