PROBLEM TO BE SOLVED: To provide a production method of vegetables capable of increasing contents of useful components such as ascorbic acid content, sugar content and total saccharide content and reducing nitrate ion content, and, in vegetables that produce anthocyanin, capable of promoting the production and making the coloration of red and purple clear.SOLUTION: Provided is a production method of vegetables by hydroponics under artificial lighting in a state of maintaining nutrition, light, water and temperature as growth conditions, where grown vegetables, immediately before being harvested, are subjected to control cultivation in which they are hydroponically cultivated, by replacing nutritious liquid with water and making photoperiod time 17 hours or more and upper limit of light intensity in the photoperiod time 20000 lux, for 1-7 days.【課題】 アスコルビン酸含有量や糖度や全糖含有量等の有用成分の含有量を高め，硝酸イオン含有量を低減させることができ，且つアントシアニンを産生するタイプの野菜においてはその産生を促進して赤色や紫色の着色を明瞭にさせることを可能にする野菜の生産方法の提供。【解決手段】 生育条件としての栄養，光，水及び温度を管理した状態における人工照明下での水耕栽培による野菜の生産方法であって，生育させた野菜を，その収穫直前に養液を水に置き換え且つ日長時間を１７時間以上とし該日長時間における光強度の上限を２００００ｌｕｘとして，１日以上７日以内の期間水耕栽培するものである調整栽培に付すことを特徴とする，生産方法。【選択図】 なし
