According to the present invention, a net-type fermentation drying apparatus comprises: a dispersion arrangement unit to disperse and arrange beans mixed with Aspergillus oryzae to be boiled on a perforated conveyor net of a large area in a preset thickness to increase the contact area of the beans and air to expedite the fermenting and drying process of the beans； a hot air distribution unit which is arranged on a lower portion of the dispersion arrangement unit, and distributes hot air towards the perforated conveyor net to promote fermentation of the beans； and an agitation unit arranged on an upper portion of the dispersion arrangement unit to be relatively moved with respect to the dispersion arrangement unit to agitate and stir the beans to promote contact between the beans and air. The net-type fermentation drying apparatus hangs beans on the perforated conveyor net of a large area satisfying hygiene and maintaining cleanliness, and automatically includes a hanging process by an apparatus to automatically stir beans in accordance with a set time and temperature. Therefore, in comparison to a conventional technique, labor and production costs are reduced, and beans are uniformly fermented and dried to produce dried beans of high quality.본 발명에 의한 네트식 발효건조 장치는, 황국균과 혼합되어 삶은 알콩의 발효 및 건조 공정이 촉진되게 상기 알콩과 공기의 접촉 면적이 증가되도록 상기 알콩을 대면적의 타공형 컨베이어 네트에 미리 설정된 두께만큼 분산하여 배치시키는 분산배치 유닛； 상기 분산배치 유닛의 하부에 마련되며, 상기 알콩의 발효를 촉진하도록 상기 타공형 컨베이어 네트 측으로 열풍을 분배하는 열풍 분배부； 및 상기 분산배치 유닛의 상부에서 상기 분산배치 유닛에 대하여 상대 이동되게 마련되어 상기 알콩을 뒤섞어 상기 알콩과 공기와의 접촉을 촉진하도록 상기 알콩을 상호 교반하는 교반 유닛을 포함할 수 있다.본 발명에 의한 네트식 발효건조 장치는, 발효 및 건조 공정에서 위생이 충족되고 청결이 유지되는 대면적의 타공형 컨베이어 네트에 알콩을 행잉할 수 있어 위생이 충족되고 청결이 유지되며, 장치를 통해 자동으로 행잉 과정을 포함하여 설정된 시간과 온도에 따라 자동으로 뒤섞고 건조되기 때문에 종래 대비 인건 비용이 감소하고 생산 비용이 절감되며 알콩의 발효가 균일하고 건조가 일정할 수 있어 고품질의 건조알콩을 생산할 수 있다.
