<；P>；PROBLEM TO BE SOLVED: To provide a process for producing a blood glucose level elevation suppressor and a starfish collagen peptide using a starfish collagen peptide, namely a waste of fishery product as an effective ingredient. <；P>；SOLUTION: The process for producing the starfish collagen peptide comprises: a starfish treating step of alkali-treating, acid-treating and water-submersing the blood glucose level elevation suppressor having as the effective ingredient the starfish collagen peptide obtained by the protease treatment of starfish and starfish； a starfish hydrolysate-generating step of treating the resulting material with a weak acid or a neutral protease after the starfish treatment to produce a starfish hydrolysate； and a starfish collagen peptide recovering step of recovering a starfish collagen peptide from the starfish hydrolysate. <；P>；COPYRIGHT: (C)2010,JPO&INPIT
