A method of producing smoke for the treatment of foodstuffs, the method comprising the steps of providing a supply of sugar alcohol, and heating the sugar alcohol to produce a gaseous product containing vapours and particulate materials. The method further comprises filtering the gaseous product to remove substantially all of the particulate materials and any toxic gases present wherein, in use, an odourless and flavourless smoke is produced.La présente invention concerne un procédé de production de fumée destiné au traitement de produits alimentaires, le procédé comprenant les étapes consistant à fournir un apport en alcool de sucre, et à chauffer l'alcool de sucre pour produire un produit gazeux contenant des vapeurs et des matières particulaires. Le procédé comprend en outre la filtration du produit gazeux pour éliminer sensiblement toute la matière particulaire et tous gaz toxiques pouvant s'y trouver, grâce à quoi, lors de l'utilisation, une fumée inodore et insipide est produite.
