The iron salt is heme iron, ferrous sulfate, iron(II) sulfate, ferrous chloride, ferric chloride, ferric citrate, ferric ammonium citrate, ferric pyrophosphate, or ferrous lactate.COPYRIGHT KIPO 2013본 발명은 w/o/w형 다중 유화법과 분무건조방법을 이용한 수용성 철분 미세캡슐 분말의 제조방법에 관한 것으로, 보다 상세하게는 중심물질인 수용성 철염의 수용액과 1차 유화제및 1차 피복물질로 W/O형 유화액을 만드는 단계와 이 W/O 유화액을 중심물질로 하고 2차 유화제와 수용성 2차 피복물질을 혼합 유화시킨 다음 원심분리하여 캡슐화된 W/O/W 유화액을 얻는 단계와 제조된 유화액을 분무건조하는 단계로 구성되는 수용성 철분 미세캡슐 분말의 제조방법에 관한 것으로서 식품의 철분강화 목적으로 첨가시 취급이 용이하고, 지방의 산화 또는 변색에 영향을 미치지 않고 체내에서의 생체 이용도를 높일 수 있을 뿐 아니라 안정성이 높아 장기간 저장이 가능하다.
