The present invention provides a sweetness and/or saltiness enhancer, and a method of enhancing sweetness and/or saltiness.The sweetness and/or saltiness enhancer of the present invention uses an oxidized fat on oil as an active ingredient which has a peroxide value of 15 to 180 and contains a milk fat of 10% by mass or more and 100% by mass or less. Also, the method of enhancing sweetness and/or saltiness of food is characterized by adding an oxidized fat on oil having a peroxide value of 15 to 180 and containing milk fat of 10% by mass or more and 100% by mass or less in the food.本發明提供甜味及/或鹹味的增強劑,以及增強甜味及/或鹹味的方法。甜味及/或鹹味的增強劑,係將過氧化值為15至180且含有10質量%以上100質量%以下的乳脂之氧化油脂作為有效成分。又,增強食品的甜味及/或鹹味的方法,係於食品中添加過氧化值為15至180且含有10質量%以上100質量%以下的乳脂之氧化油脂。
