Provided herein are methods of creating tissues and organs in vitro or ex vivo, and methods of using such tissues and organs, including depositing cells and extracellular matrix on a surface. In one embodiment, the cells and ECM used according to the methods for creating tissues (eg, three-dimensional tissues) and organs described herein are deposited as part of the same composition. In another embodiment, the cells and ECM used according to the methods of creating tissues (eg, three-dimensional tissues) and organs described herein are deposited as part of different compositions.
