PURPOSE: Red pepper paste using yacon, and a producing method of pickled yacon using thereof are provided to improve the palatability of the red pepper paste by adding the sweetness of the yacon. CONSTITUTION: Red pepper paste is obtained by mixing 100 parts of sugar solution by weight containing a yacon extract, 30-70 parts of red pepper powder by weight, 5-15 parts of fermented soybean powder by weight, 2-10 parts of salt by weight, and 2-6 parts of soy sauce by weight, and aging the mixture. 100 parts of sugar solution by weight additionally contains 10-30parts of yacon additive by weight. Pickled yacon is obtained by adding 10-30 parts of red pepper paste by weight to 100 parts of yacon by weight, and aging the mixture for 10-50 days.본 발명은 야콘을 이용한 고추장 및 이를 이용한 기능성 야콘 장아찌의 제조방법에 관한 것으로서, 더욱 상세하게는 야콘의 뿌리로부터 추출한 야콘 추출물을 당액으로 이용한 고추장 및 이를 이용한 기능성 야콘 장아찌에 관한 것이다. 본 발명의 야콘을 이용한 고추장은 당액에 고추가루, 메주가루, 소금, 간장을 혼합한 후 숙성시켜 형성되며, 상기 당액은 야콘 추출물을 함유한다.
