Beschrieben werden ein Verfahren zur thermischen Behandlung eines flüssigen Produkts (2) unter Einhaltung eines positiven Druckgefälles zwischen einem Produkt führenden Primärkreis (4) und einem ein Wärmeaustauschmedium führenden Sekundärkreis eines Wärmetauschers (3), sowie eine entsprechende Behandlungsvorrichtung (1). Erfindungsgemäß wird das positive Druckgefälle durch Anlegen eines Unterdrucks (PSb) an den Rücklauf (5b) des Sekundärkreises erzeugt. Dadurch können Querschnitt reduzierende Einbauten im Primärkreis vermieden werden und daher Produkte mit Fruchtstücken oder dergleichen besonders schonend behandelt werden.Heat treating, preferably short-time heating a liquid product (2), comprises passing the product through a primary circuit (4) of a heat exchanger (3) and a liquid exchange medium through a secondary circuit (5) of the heat exchanger under maintaining a positive pressure gradient. An independent claim is also included for a device (1) for heat treating a liquid product, comprising a heat exchanger, on which a primary circuit is designed for the product and a secondary circuit is designed for an exchange medium, pressure gauges for comparing an outlet side pressure of the primary circuit and a leading side pressure of the secondary circuit, and a suction unit associated with the secondary circuit.
