The present invention relates to a method for preparing baked salt using an indirect heating scheme using radiant heat. According to the present invention, the method for preparing baked salt includes: a first step of aging sun salt in a well-ventilated space at a room temperature of 15-25°；C to remove moisture contained therein； a second step of inputting the aged sun salt with residue water removed in dedicated baked salt pots made of earth used to manufacture steaming pots and loading six dedicated baked salt pots in a dedicated wagon； a third step of outputting all charcoals baked in an oven and inputting the dedicated baked salt pots storing the sun salt while being loaded on the dedicated wagon when the temperature of the oven having an inside made of barley stones reaches 800°；C； and a fourth step of sealing the inlet of the oven with clay soil when the dedicated baked salt pots storing the sun salt are input to the oven and calcining the sun salt in the dedicated baked salt pots by using indirect radiant heat for 48 hours. Accordingly, unlike the conventional method of putting the sun salt in containers to calcinate the sun salt at a high temperature by using a direct heating method, the present invention uses the indirect heating method to remove impurities harmful to the human body while not damaging the minerals beneficial to the human body.COPYRIGHT KIPO 2018본 발명은 복사열을 이용한 간접가열 방식의 구운소금 제조방법에 관한 것이다. 본 발명에 따른 제조절차는, 천일염을 15 ~ 25℃ 상온의 통풍이 잘 되는 공간에서 숙성시켜 천임염에 함유된 수분을 제거하는 제 1 단계； 약탕기를 만드는 흙을 이용하여 제작된 구운 소금 전용 옹기에 간수가 제거되고 숙성된 천일염을 넣고, 6개의 전용 옹기를 전용수레에 적재하여 준비하는 제 2 단계； 가마를 통해 구워낸 참 숯을 모두 밖으로 꺼낸 후, 내부가 맥반석 돌로 형성된 가마 안의 온도가 800℃에 도달하면 전용수레에 적재된 천일염이 담겨진 전용 옹기를 참숯 가마 안에 밀어 투입하는 제 3 단계； 및 가마 안에 천일염을 담은 옹기가 투입되면 가마 입구를 황토 흙으로 밀봉하고 48시간 동안 간접 복사열을 이용하여 옹기 내 천일염을 소성하는 제 4 단계；를 포함하는 것을 특징으로 한다. 이에 따라, 일반적으로 구운소금 제조시 천일염을 용기에 넣고, 직접가열 방식으로 고온에서 소성을 통해 형성되는데, 간접가열 방식으로 인해 천일염이 가지고 있는 인체에 유익한 미네랄 성분은 파괴하지 않으면서, 인체에 해로운 불순물만을 제거하여 양질의 구운 소금을 제공한다.
