Process of fractionation of animal by-product comprises: (a) grinding animal by-product to obtain particles having a size of 0.1-100 mm； (b) contacting the material with water at a temperature of 20-85[deg] C； (c) separating the solid phase and liquid phase from the mixture at a temperature of 20-85[deg] C； (d) decanting the liquid phase obtained in step (c)； and (e) cooling and separating the aqueous and fatty phase obtained after the step (d). An independent claim is included for protein solution obtained by the method, containing 1-20 wt.% of dry extract comprising: 75-95 wt.% of protein； 1-10 wt.% of fat, and 0.5-3 wt.% of minerals； 0.1-5 wt.% of sulfated glycosaminoglycans； and 0.01-1 wt.% of hyaluronic acid.La présente invention a pour objet un nouveau procédé de fractionnement de sous-produit animal issu des procédés utilisés dans la filière de la charcuterie industrielle comprenant les étapes suivantes : a) broyage du sous-produit animal jusqu'à obtenir des particules dont la taille varie de 0,1 mm à 100 mm. b) mise en contact de la matière broyée à l'étape a) avec de l'eau à une température allant de 20°C à 85°C ； c) séparation de la phase solide et de la phase liquide du mélange obtenu à l'étape b) à une température allant de 20°C à 85°C ； d) décantation de la phase liquide obtenue à l'étape c) ； e) refroidissement et séparation de la phase aqueuse et de la phase grasse obtenues après la décantation de l'étape d) ； ainsi que les diverses utilisations des produits obtenus par ce procédé.
