PROBLEM TO BE SOLVED: To provide low-cost liquid oil and fat, which combine particularly high liquid and oxidation stability properties, and to provide solid fat which contains a large amount of PPP by using low-cost palm oil and fat as a raw material.SOLUTION: Palm oil and fat, in which the constituent fatty acids contain 70 wt.% or less of saturated fatty acids, is used as the main raw material. After conducting directed interesterification reaction until the SSS/S2U ratio in the oil and fat reaches 0.5 or more, and until S2U reaches 14 wt.% or less, without SSS exceeding 31 wt.%, during the reaction, the raw material is separated into liquid oil and fat and solid fat. In addition, after conducting directed interesterification reaction while forcing oil and fat, which use the palm oil and fat as the main raw material, to flow by applying external force to the oil and fat, the raw material is separated into the liquid oil and fat and solid fat with keeping the solid fat content of more than 1 wt.%. The following are thus obtained: the liquid oil and fat, which contain 10 to 30 wt.% of glycerides, in which the SU2/UUU ratio is 1.9 or less, the SSS content is 2 wt.% or less and palmitic acid is linked at the 2-position and solid fat containing a large amount of PPP.COPYRIGHT: (C)2012,JPO&INPIT【課題】安価なパーム系油脂を原料とし、特段に高い液状性と酸化安定性を兼ね備えた安価な液状油脂と、PPPを多く含む固体脂とを提供する。【解決手段】構成脂肪酸中の飽和脂肪酸70重量%以下のパーム系油脂を主原料とし、油脂中のSSS/S2Uが0.5以上になるまで、かつ反応中にSSSが31重量%を越えることなくS2Uが14重量%以下になるまでダイレクトエステル交換反応した後、液状油脂と固体脂とに分別する、また、前記パーム系油脂を主原料とする油脂に外部から力を加えて流動させつつ前記ダイレクトエステル交換反応した後、固体脂含量を1重量%以下にすることなく液状油脂と固体脂とを分別することで、SU2/UUUが1.9以下、SSS含量が2重量%以下、2位にパルミチン酸が結合したグリセライドを10~30重量%含む液状油脂と、PPPを多く含む固体脂と、を得る。【選択図】なし
