The present invention relates to a new process for the manufacture of semi-candied products, more particularly from fruit, free of successive confectioning baths with increasing sugar concentration； and the semi-candied products obtained by said process having a more intense fruit taste. La présente invention a pour objet un nouveau procédé pour la fabrication de produits semi-confits, plus particulièrement à partir de fruits, exempt de bains de confisage successifs à concentration de sucre croissante ； et les produits semi-confits obtenus par ledit procédé présentant un goût plus intense en fruit.
