The present invention relates to a system for suppressing the formation of a cyanide compound and softening tissues of a bamboo shoot using calcium salt. According to the present invention, a system for suppressing the formation of a cyanide compound and softening tissues of a bamboo shoot using calcium salt decomposes hydrogen cyanide which is a natural toxic matter of a bamboo shoot, into harmless Na_2CO_3, N_2, NaCl, and H_2O by chlorinating the hydrogen cyanide by ion decomposition reaction with alkali CaCl_2 which does not generate a bad smell and a bad taste among a food additive of a CaCl form containing calcium which is a divalent ion. So, the system for suppressing formation of a cyanide compound and softening tissues of a bamboo shoot using calcium salt can suppress quality change of the bamboo shoot in comparison with a salting method which is an existing storage method for the bamboo shoot and can help development of a processed good and extension of a quality time limit of the other processed goods using the bamboo shoot by a system of effectively suppressing the formation of the cyanide compound which is the toxic matter of the bamboo shoot. Therefore, the system for suppressing the formation of a cyanide compound and softening tissues of a bamboo shoot using calcium salt can improve usability of the bamboo shoot and diversification of the processed good of the bamboo shoot.본 발명은 염화칼슘을 이용한 죽순의 조직연화 및 시안화합물의 형성 억제 시스템에 관한 것으로, 본 발명은 죽순의 천연 독성물질인 시안화수소(Hydrogen Cyanide)를 2가 이온인 칼슘을 함유한 칼슘염 형태의 식품첨가물 중 이미와 이취가 발생하지 않는 알칼리성의 칼슘염(CaCl2)과의 이온 분해반응을 통해 염소화하여 무해한 Na2CO3, N2, NaCl, H2O으로 분해되는 것을 특징으로 하는 염화칼슘을 이용한 죽순의 조직연화 및 시안화합물의 형성 억제 시스템을 제공함으로써, 기존 죽순의 저장 방식인 염장법을 보다 죽순의 품질변화를 억제하고 죽순의 독성물질인 시안화합물의 형성을 효과적으로 억제하는 시스템을 통해 죽순을 이용한 다른 가공품의 품질유지기한 증대 및 가공품의 개발에 일조함으로서 죽순 가공품의 다양화 및 죽순의 이용성을 증대하도록 한 독특한 효과가 있다.
