[PROBLEM] To provide a lecithin or lecithin preparation ofwhich resistance to heat discoloration is achieved withoutsignificant change of the phospholipid composition of thelecithin nor of the oligosaccharide content； and a method forproducing the same.[SOLUTION] A lecithin or lecithin preparation obtained bybringing a lecithin into contact with an adsorbent and removingthe adsorbent, the lecithin or lecithin preparation havingresistance to heat discoloration and having an oligosaccharidecontent being 50% by mass or more of the content before thecontact with the adsorbent.
