A scion cutting apparatus is disclosed. The apparatus includes a cutting unit configured to receive scion stock. The stock is feed into the cutting unit which has one or more first cutters (20) configured to move to a clamp position in which they partially penetrate the scion stock, so as to hold the scion stock during a cutting operation. One or more second cutters (22) move to cut a desired scion profile into the scion stock while it is held by the one or more first cutters. After the scion profile is cut the one or more first cutters sever the cut scion stock from stock yet to be cut. The apparatus further includes one or more guides (25) which constrain the travel path of the second cutters to cut a desired scion profile. Adjustment of the distance between the guides and/or the shape of the guides can change the shape of the profile cut.
