PROBLEM TO BE SOLVED: To provide a food/drink, maintaining deliciousness of a raw material while realizing chewability thereof.SOLUTION: A food/drink is obtained by: S10 peeling a Cucurbita pepo S20 removing seeds and pulp to obtain flesh S30 using a processor to cut the flesh so as to have a maximum width of 1-5 mm S40 filling the cut Cucurbita pepo into an aluminum pouch and heating for 14 minutes in boiling water S50 adjusting breaking strength into 5.9-18.7 N or preferably 7.1 N or more, and mixing or blending the Cucurbita pepo thus obtained and S60 sterilizing and packing.SELECTED DRAWING: Figure 1COPYRIGHT: (C)2017,JPO&INPIT【課題】その歯応えを実現しながらも、原材料の美味しさを活かした飲食品の提供。【解決手段】カボチャを剥皮S10し、種及び綿を除去S20した果肉を、最大幅が1~5mmとなるようにプロセッサーを用いて切断S30し、切断したペポカボチャをアルミパウチに充填して、沸騰水中で14分加熱S40し、その破断強度を、5.9~18.7N、好ましくは7.1N以上に調製し、このようにして得られるペポカボチャを配合あるいは調合S50し、次いで殺菌充填S60して得られる飲食品。【選択図】図1
