The invention relates to a carbonated drink and a preparing method thereof. The preparing method includes dissolving the main ingredient, pectin and hydrophobic constituent in water respectively to prepare a main ingredient solution, a pectin solution and a hydrophobic constituent solution mixing the main ingredient solution, the pectin solution and the hydrophobic constituent solution to prepare a mixture solution and infusing the carbon dioxide gas to obtain the carbonated drink. The  pectin is ranged of 0.02%-0.06% of the carbonated drink, and is dissolved at 80℃~88℃for 5-8 minutes in water. The hydrophobic constituent is dissolved at 60℃~70℃ for 3 seconds-1minute in water. The carbonated drink preparing by the method has good emulsion stability, and an oil ring may not generate and float up in long time storage.本發明有關於一種碳酸飲品及其製備方法,該方法包含下列步驟:將主原料、果膠及油溶性成份分別於水溶解,以形成主原料溶液、果膠溶液及油溶性成份溶液;均勻混合主原料溶液、果膠溶液及油溶性成份溶液以形成混合溶液;以及於混合溶液中加入碳酸氣體以獲得碳酸飲品。其中,果膠於碳酸飲品中的比例可為0.02%~0.06%,果膠溶液的製備條件可為於80℃~88℃並攪拌5分鐘~8分鐘,油溶性成份溶液的製備條件可為於60℃~70℃並攪拌3秒鐘~1分鐘。依據此方法調配而成的碳酸飲品,具有較佳的乳化安定性,不會於久放時產生浮油圈。S10~S30‧‧‧步驟
