PROBLEM TO BE SOLVED: To provide food and drink and combination ice cream, containing an anthocyanin-based pigment, having pH in a range of 7 to 8 and exhibiting blue color, and containing trivalent iron ion, and having clear blue color without darkening a color tone of the blue color, and a method for clarifying blue color of food and drink.SOLUTION: The above described problem is solved by food and drink with clarified blue color tone, containing an anthocyanin-based pigment, having pH in a range of 7 to 8 and exhibiting blue color, and containing trivalent iron ion of 5.9 to 11.8 pts.wt. based on 100 pts.wt. of the anthocyanin-based pigment and containing magnesium ion.SELECTED DRAWING: None【課題】アントシアニン系色素を含有しpHが7~8領域にあって青色を呈し、かつ3価鉄イオンを含有する飲食品において、その青色の色調が黒ずむことなく鮮やかな青色を呈する飲食品及び組合せ冷菓、並びに飲食品の青色色調鮮明化方法を提供する。【解決手段】アントシアニン系色素を含有しpHが7~8領域にあって青色を呈し、かつ該アントシアニン系色素100重量部に対し3価鉄イオンを5.9~11.8重量部含有する飲食品において、マグネシウムイオンを含有することを特徴とする青色の色調が鮮明化された飲食品により上記課題を解決する。【選択図】なし
