The present invention relates to a method for obtaining Curcuma juice from fresh Curcuma rhizome, the method being characterized in that it comprises, after a step of washing the rhizome, at least one freezing step and then one thawing step, said rhizome not being peeled, wherein said freezing and thawing steps are aimed at destroying the network of the rhizome so as to promote the subsequent extraction of the useful components.
