PROBLEM TO BE SOLVED: To provide a cold confectionery production apparatus which has high cooling efficiency and can cool the whole surface of the cooling plate quickly.SOLUTION: A cold confectionery production apparatus includes a cooling plate 2 for cooking cold confectionery composed of a metal, a heat transfer member 3 which is provided on the bottom surface side of the cooling plate 2 and composed of a composite comprising graphite and ceramics, a coolant passage 4 provided in the lower part of the heat transfer member 3 and a cooling device 5 which cools the coolant flowing through the coolant passage 4. The coolant passage 4 is housed in a groove 3a for the coolant passage provided in the lower surface of the heat transfer member 3.
