The present invention provides a water saving apparatus for a steam sterilizer. The water saving apparatus comprises: a second reservoir (20) which stores water supplied to an ejector (10) and includes an additional cooling water pipe (21) through which cooling water supplied from the outside passes； a heat exchanger (30) which exchanges heat with high-temperature steam discharged from a sterilizing chamber (60) by using cooling water discharged from the second reservoir (20)； a first reservoir (40) which temporarily stores water having passed through the heat exchanger (30)； and a temperature valve (TV) which measures a temperature of water discharged from the first reservoir (40).
