PURPOSE: A manufacturing method is provided for fermenting high function food which ferments with ferment strain and uses same method for fermentation of product in which it has oxygen-resistant and immunity activity. CONSTITUTION: A manufacturing method of fermentation product comprises of a process using a pot for preparing medicine along with distilled water and crushes ginseng berries or seeds into milled fiber wedges. It sterilizes auto clave &lsqb；autoclave&rsqb； after decompression in order to prevent growth of various germs &lsqb；saprophytic bacterium&rsqb； and is crushed again after heating in 100>；= and performs hot water extraction and obtains extract where bacteria fermentation product is centrifugated. Process of drying heater &lsqb；heat/IR convection system&rsqb； filters supernatant and removes foreign substance and dried ginseng berries. Process of adding ferment strain L. plantarum in seed and fermenting is obtained in fermentated product.Ferment strain may be B. subtilis or L. casei. It inoculates in MRS-agar plate and it makes stock plate and it centrifugates at ferment strain in MRS broth after 3 times of subculture. Ferment strain liquid is added in ginseng berries or seed and lactobacillus is inoculated with ~ 10 level per sterilization testing material in mL and cultivates in 37>；= for 72 hours.
